Beef Tapa Silog
A Palay-coded Filipino breakfast for the Find Me Café table.
Current working direction: beef tapa using Saint C Cocomansi as a base, vinegar, housemade banana ketchup, fried egg and atsara.
KULTURA IN MOTION · MANILA 2026 · CONCEPT PREVIEW
A proposed café collaboration bringing Find Me Café’s hidden, warm Makati energy together with Palay’s Filipino food language and Chef Fhred’s Melbourne café experience.
This page is a creative discussion piece, not a public event announcement.
01 · THE IDEA
The starting point is intentionally compact: a Filipino breakfast, a specialty coffee and a baked good. Not a full Palay takeover, and not Find Me Café wearing somebody else’s identity.
The opportunity is to create something that feels natural inside Find Me Café — warm, intimate, curious and a little hidden — while Palay brings a distinctly Filipino point of view shaped by Melbourne hospitality.
What happens when a hidden Makati café meets a Filipino restaurant from Melbourne?
03 · SHARED LANGUAGE
Find Me Café gives the collaboration its room, rhythm and warmth. Palay brings cultural storytelling, Filipino flavour and the experience of building a Filipino hospitality brand in Melbourne.
Warm wood, cream surfaces, vinyl cues, intimate scale and the feeling that guests have discovered somewhere personal.
Palay blue, rice and grain references, confident editorial type and Filipino food stories refined without losing where they came from.
04 · WHAT WE COULD BUILD TOGETHER
The microsite can then evolve from this concept preview into the public event page once Find Me Café and Palay agree on the menu, format and service details.
Test the three current ideas, edit them with the café team, add or remove items where it makes sense.
Confirm service hours, covers, pricing, workflow, equipment and whether the activation is walk-in, pre-booked or both.
Hero reel, menu-item stills, café atmosphere, Chef Fhred with the Find Me team and natural partner integration.
Replace proposal language with confirmed details, final photography, booking information and the finished collaborative menu.
